Hi, I'm new to this forum but I have a few questions and pardon me if these have already been addressed.

1) How do I remove or hide 'Movies', 'Downloads' and 'RSS'?
2) How can I get rid of 'File Catalog'?

Lastly, How can I lock my site so no one can see it until it's done?

You can remove Them, Go To Your Site's Control Panel => Customize Design => MENU & Remove The Following Code.

Go To Control Panel => File Catlog => Uninstall This Mode.
Then Answer Security Question And It'll Be Removed.

Go To Control Panel => Settings (Located at Top Bar) => Common Settings And Check The Box: Site Down Then Save It

Th only question I have now is in regards to the 'File Catalog', I have uninstalled the module, but the menu is still there on the site.

Do I wait for a certain amount of time to pass before it is gone, or does that stay here?

Edit; I apologize for the double post but I believe I figured it out! Thank you so much and happy Site-keeping =)

Do You Mean To Remove The FileCatlog Link From Menu in Sidebar? To Do So Follow These Steps.
Login To Your Site => Select Builder And Enable It => Click Cog Shaped Wheel Above The Menu => Select "HTML" Tab => And Delete This Code:
